Suzanne Rogers's Lemon Square Recipe!

After Suzanne Rogers (Maggie, DAYS) mentioned her famous lemon squares in our subscriber newsletter, we had many requests for the recipe. “I’ve had it so long, I don’t know where I found it. It may have been in a magazine, but this is over 20 years old. The sheet I have it on is a flimsy, yellow piece of paper!” Rogers says.Here it is:



Ingredients

1 3/4 cups flour (sifted)

3/4 cup powdered sugar (sifted)

1/2 pound salted, softened butter



•Mix together and press into a 9 X 13-inch Pyrex (glass) square dish.

•Bake at 350 degrees for 25 minutes. (Depending on your oven, check after 20 minutes.)



As that bakes in the oven, mix

4 eggs

4 tablespoons flour

6 tablespoons fresh lemon juice (Hint: Look for sweet lemons.)

2 cups sugar

1/2 teaspoon baking powder




•Mix these ingredients together with a hand mixer.

•Take out the crust that’s been baking in the oven.

•While the crust is still hot, pour the new
mixture over the crust and bake for 25 more minutes. (Depending on your oven, check after 20 minutes.)

•Remove from oven and let cool in dish. Sprinkle with powdered sugar. After it has cooled completely, cut into desired portions. Enjoy!
